Allspice (Jamaican Pepper) (Pimenta

Allspice is
a highly aromatic dried berry named because its flavour resembles a
combination of pepper, cloves, cinnamon and nutmeg.

Allspice is
the dried fruit of the Pimenta dioica plant. The fruit is picked green and
unripe. It is then sun dried until it becomes brown like peppercorns.

For the best
flavour, buy whole dried fruits and grind them as required, rather than
buying ground allspice.

Allspice
leaves are also used in traditional recipes in much the same way as bay
leaves, but they don't keep in the way that bay leaves do.
