buckwheat (Fagopyrum esculentum)

  • The seeds of the buckwheat are known as buckwheat groats.

  • Buckwheat groats can be used to make crackers, to make bases for cakes or as an addition to breakfasts or other dishes.

  • My preference is to use them partially sprouted and then dehydrated. The dehydrated groats can then be kept in airtight containers for a while until they are required. These are known as buckwheaties.
