Dates are
often used in raw food recipes as a sweetener.

stones and soak medjool dates for a couple of hours in a minimal amount of
water. This makes blending easier.

to soak dried dates overnight in a minimal amount of water. They can
simply be mashed up with a fork to make a sweetener.

Kharek are dried dates that can be purchased from the Asian shops.
They tend to be very
dry and not very sweet. They always need a good soak, preferably
overnight.

Medjool
dates can be purchased fresh. You do need to remove the stones.

Dried and
pitted dates of varying quality are widely available. The generally look
like the dates in the middle picture. I always soak these at least for a
few hours.
