  • Dates are often used in raw food recipes as a sweetener.

  • Remove the stones and soak medjool dates for a couple of hours in a minimal amount of water.  This makes blending easier.

  • It is best to soak dried dates overnight in a minimal amount of water. They can simply be mashed up with a fork to make a sweetener.

  • Kharek are dried dates that can be purchased from the Asian shops. They tend to be very dry and not very sweet. They always need a good soak, preferably overnight.

  • Medjool dates can be purchased fresh. You do need to remove the stones.

  • Dried and pitted dates of varying quality are widely available. The generally look like the dates in the middle picture. I always soak these at least for a few hours.
