#222 Almond flan base II This recipe makes one almond flan base

Equipment

  • food processor

  • a 20cm cake tin (with a removable base)

  • dehydrator

Cusinart food processor cast metal edition MP14NU 3.7l

 

20cm cake tin ring (8 inches)

 

Dehydrator (Excalibur 4926T)

 

Ingredients

  • 1C almonds

  • 2T golden flax seed + 2T water

  • 1/2 C raisins

Notes

  • The addition of a little flax seed  prevents the flan base from cracking.

Almond flan base II

Almond flan base II

This is another example of a flan base that can be used as a base for sweet flans. The addition of flax seeds is to help prevent cracking during dehydration.

Soaking

Soak the almonds in water for overnight.

Soak 2T flax seed in exactly 2T water for a couple of hours.

Soak the raisins in a minimal amount of water for a couple of hours.

Method

Drain and wash the almonds.

Process everything together to make a dough.

Place the cake tin, without the base, on a dehydrator sheet. Spread the mixture inside the ring to form an even circle. Remove the cake tin.

Dehydrate

Dehydrate at or under 46C (115F) overnight. Turn over and dehydrate for another half a day.

Usage

The flan base will keep in the fridge for a couple of days until you are ready to use it.

Afterwards

Clean the food processor.

Clean the cake tin.

Clean the dehydrator sheet.

Recycle the waste
