#223 Spicy pineapple This recipe makes enough for four to six servings.

  • seed grinder`

seed grinder (aka coffee mill)

  • 1 large ripe pineapple

  • 1 lemon

  • 1/2 t ground cinnamon

  • 1/2 t whole cloves

  • a piece of root ginger to make 1t minced ginger

Spicy pineapple

I had a large pineapple that had become nicely ripe. I had something in mind for it, but by the time it was ready, I couldn't remember what this was! So I simply chopped it up and added some spices. It tasted really yummy the next morning!

Method

Chop the pineapple up into 1cm cubes. Simply slice it into rings, remove the skin from each ring, and then dice it up. Put the chunks into a large flat casserole dish.

Drizzle over with the juice from the lemon.

Sprinkle the cinnamon over it.

Grind the cloves as finely as you can.

Mince the ginger to make 1t minced ginger. You can use the seed grinder for this too.

Mix everything together so that the pineapple chunks are covered with lemon juice and spices.

... allow the flavours to develop.

Just leave it in the fridge overnight for the flavours to develop. It will taste great the next day.

Serve

Serve in small bowls. Decorate with something red for example a strawberry or cherry if you have one.

Afterwards

Clean the seed grinder.

Recycle the waste.
