#107 Honey and thyme dressing II This recipe makes about 1C (240ml)

Ingredients

  • 2T red wine vinegar (30ml) (*)

  • 2T raw honey (30ml) (raw runny honey is best) (**)

  • 3T fresh thyme leaves

  • one lemon

  • 2 cloves of garlic

  • 1/3C olive oil (90ml)

Honey and thyme dressing II

If this is made well with good quality ingredients, it produces a superior salad dressing for all occasions.

Method

Mix the red wine vinegar and honey together in a small bowl.

Pluck the leaves from the thyme until you have about 3T. Chop the leaves up very finely. If you are using fresh organic thyme then the leaves are a bit firmer than the soft supermarket stuff. In this case you can use the seed grinder to chop it up. Add the chopped thyme leaves to the bowl.

Add the juice from a lemon.

Chop the garlic cloves up as finely as you can and add it to the mix.

Mix everything together before adding the olive oil.

Finally add the olive oil and give it another stir.

Serve

Delicious served fresh with any salads.

Afterwards

Clean the seed grinder.

Recycle the waste.
