This is a variation of our mainstay dressing when on holiday in Crete. No problem finding the ingredients as there was a lemon tree in the garden and the lady in the village shop kept giving us olive oil.

Simple salad dressing II

A simple easy to make salad dressing. It's surprising what a difference some honey makes.

Method

Remove the skin from the garlic clove and chop until very fine. Place in a small bowl.

Squeeze the lemon over it.

Add the honey and stir in well before adding the olive oil.

Add the olive oil and mix it all together.

Serve

This can be served with most salads.
