#33 Tomato and mint salad dressing

Equipment

  • blender

Blendtec Xpress blender

 

Ingredients

  • three or four tomatoes (300g)

  • a handful of mint

  • one lemon

  • three cloves of garlic

  • four dessert spoons of white wine vinegar (*)

  • dessert spoon of olive oil

  • a few grains of Himalayan rock salt

Alternatives ingredients

  • one or two green tomatoes from the garden go well in this

  • Try lime instead of lemon

A great tasty salad dressing

Method

Remove the skin from the tomatoes.  If you dip them into nearly boiling water for less than a minute the skins can easily be removed without cooking the tomatoes.

Wash the mint and discard the stalks.

Peel the lemon and discard the skin.

Peel the garlic cloves.

Put the tomatoes, mint, lemon and garlic into the blender.

Add the white wine vinegar, olive oil and a pinch of Himalayan rock salt.

Blend together until mixed.

Add a little more white wine vinegar or a little water if you prefer it slightly thinner.

Serve

Pour into a small serving jug or similar

Serve with any salads

Afterwards

Clean the blender

Recycle the waste
