#39 Paul's winter warmer soup This recipe makes approximately one litre

  • blender

Blendtec Xpress blender

Ingredients

  • 6 or 7 tomatoes (500g)

  • one fennel bulb (300g)

  • half a green bell pepper (100g)

  • half a red onion (60g)

  • one lemon

  • a handful of basil leaves

  • a handful of coriander leaves

  • half a chilli pepper

  • 2 garlic cloves

  • 2 tablespoons olive oil

  • 1 tablespoon balsamic vinegar (*)

  • quarter teaspoon tropical peppercorns (not illustrated)

  • a pinch of Himalayan rock salt

  • 4 ice cubes

(*) denotes a non raw food ingredient.

Paul's winter warmer soup

Paul's winter warmer soup

Back from a winter's walk and this one is a treat. Although there's lots of ingredients it's actually very quick to make. A cold soup that warms you up!

Method

Wash all the ingredients as necessary.

Remove the skin from the tomatoes. If you dip them into nearly boiling water for less than a minute the skins can easily be removed without cooking them.

Skin the lemon and onion half.

Discard the seeds from the green pepper.

Simply put everything except the ice into the blender

 and blend until mixed but still with a bit of a crunchy texture.

Crush the ice first and then blend it in briefly.

Serve

Pour into small soup bowls and serve fresh.

Afterwards

Clean the blender

Recycle the waste
